Spinach Salad with Cherries and Walnuts

For a delicious light summer salad, try tossing a 5 oz bag of spinach with a few tablespoons of Champagne vinegar, olive oil, a 1/2 cup of dried cherries, and a 1/2 cup of crushed walnuts. The spinach is packed with dairy-free, bone-fueling calcium, while the cherries provide antioxidants that reduce inflammation. The walnuts contain omega-3 oils that enhance your skin’s elasticity.

Soba Noodles with Ginger Broccoli

Homemade Orange Dreamsicles

For a quick summer cool-off, blend 1 cup orange juice with 1 cup coconut milk, 1/2 teaspoon of vanilla, and 3 tablespoons of agave nectar or any natural sweetener. Freeze the mix in popsicle molds for about 4 hours, then enjoy! Be sure to use fortified orange juice to receive the skin-nourishing benefits of its vitamin C as well as its bone-boosting calcium.
